2025 Merlot Rosé

The grapes were hand harvested Oct 1 and soaked in the picking bins overnight to extract minimal colour and some berry fruit flavours and aromas. The next morning they were destemmed and pressed helping to enhance the extraction. The juice fermented in 50% neutral barrel and 50% stainless steel tank, the barrel portion under went partial malolactic conversion. This helps to add more flavour and texture layers to the wine.
